Stir-Fried Mushroom and Spinach

I like to cook easy and fast meals. Sometimes I do crave for a dish that takes a long time to prepare. But on weekday nights like this, easy peasy recipes are needed.

This stir-fried vegetables wont take long to cook. In 10 minutes including preparations, you can have your meal ready to eat. It is delicious even only with white rice.

Ingredients

2 king trumpet mushrooms
3 bunches Korean spinach
2 cloves garlic, chopped
1T oyster sauce
1/2t sesame oil
2T water
salt and pepper
1T oil

Directions

1. Julienned the king trumpet mushroom. Not too small though. Wash the spinach in the running water. I always soak leafy vegetables in water with a teaspoon of baking soda for about 5-10 minutes to get rid of the chemicals.
2. Heat the oil in the pan. When it is ready, put the garlic on it and stir-fry until fragrant.
3. Add the mushroom and water, and continue to stir.
3. Add the oyster sauce, salt, and pepper
4. After the mushroom is half cooked, add spinach on the pan. It doesn't take a long time because the spinach is easily cooked.
5. When it is cooked, add the sesame oil, stir, and remove from heat.
We had this mushroom stir fry with Indonesian fried chicken, white rice and sambal terasi or chilli with shrimp paste. It was sooo good.
