Nasi Uduk

Nasi Uduk is originally from Betawi, or Jakarta in the old name. Nasi uduk is quite similar with Nasi Kuning from Java, the difference is nasi kuning using one more ingredient, turmeric, so it has yellow color.

Nasi uduk is usually eaten for breakfast in Indonesia, accompanied with various choices of complements. Here I got the recipe for easy peasy nasi uduk, cooked with my savior rice cooker.

Ingredients

3 cups of uncooked rice
1 stalk lemongrass, discard the green part, bruised
3/4 cup coconut cream
2 lime leaves, bruised
1 bay leaf
1/2cm galangal, peel, bruised
3/4T salt
water

Complements

Shredded omelette
Soun goreng
Beef floss
Chilli with crispy anchovies
Sliced cucumber

Directions

1. Wash the rice thoroughly until the water becomes clean.
2. Put the rice in the rice cooker, add enough water until it covers about 2cm above the rice.
3. Add the coconut cream, lemongrass, lime leaves, bay leaf, galangal, and salt, mix until the coconut cream disolved.
4. Cook the rice and stir every 8-10 minutes to prevent burn on the bottom of the rice cooker.
5. Cook until done.
6. Serve with complement.
