Banana and Choco Chip Pancake


Pancake is probably the most eaten breakfast here in our household. It is fast and easy to cook, you can throw anything in the batter to make it more nutritious and delicious. Blueberry, yogurt, apple, pear, anything. This banana and choco chip pancake is one of Andra's favorite breakfast.

Ingredients

5T all purpose flour
1 cup fresh milk
1 egg
1T butter, melted and cooled
1 big banana, mashed
2T choco chips
1t baking soda
1/2t baking powder
2T sugar, optional

Directions

1. Shift the flour, baking powder, and baking soda in a big bowl and mix. Make a hole in the center
2. In another bowl, beat the egg and sugar until fluffy
3. Stir in the milk and mix until combined
4. Pour the egg mixture to the center of the flour in batches. Stir in flour to the egg mixture little by little to prevent lumps.
5. Mix in the mashed banana, choco chip and butter until combined. If the batter is too thick, add more milk, and if it's too thin, add more flour. The batter should be thick like yogurt.
6. Turn on the pan to medium low. When it is ready, pour 2 tablespoons of batter and make a thick circle. Flip when the bottom is brown.
7. Serve with whatever you like. Chocolate syrup, maple syrup, sliced banana. Be creative!
